Our artisan micro dairy has teamed up with one of the Yarra Valley’s most legendary cheese makers, to launch a new range of cheeses that add flavour – and kindness – to every festive cheese platter.

 

I am so pleased to share with you that How Now Dairy has been working with renowned Yarra Valley cheese maker Jack Holman – and we’ve just released two elegant world-class cheeses.

 

Jack is a Yarra Valley local and the name behind some of the most memorable, award-winning cheeses that have made the region famous around the world.

 

The new Jack Holman cheeses join How Now Dairy’s feta, created by husband and wife cheese making team Andrew and Nardia from Goldfields Farm house Cheese, to make up How Now Dairy’s inaugural Kind Cheese range.

 

At How Now Dairy, animal welfare and humane farming are our focus. We keep cow and calf together and we focus on biological farming methods – no nasty chemicals or sprays here! In return, we are gifted with rich, creamy, full of flavour milk from stress-free and happy cows.

 

All the cheeses we’ve created are made in small batches, with milk from that day, and lovingly crafted by us for you.

 

 

Galactic

Cheese maker: Jack Holman

Milk: How Now Cow’s milk from northern Victoria

 

How old am I: 1-2 weeks

 

Flavour: Yeasty, bread flavours with some acidity

 

Body: soft and delicate

 

What I look like: I am sold in packs of 2 x 40gm disks

 

Galactic is the brightest star in the Cheesey Milky Way; bringing happiness to every table or picnic rug it graces.

 

While it may appear delicate and unassuming, it’s the yeasty bread tones tinged with the slightest acidity that put Galactic in a solar system all of its own.

 

Galactic is a lactic curd cheese that is encased in a unique geotricum rind, which is different to other commercial rinds in that it is more gentle and delicate, and is faster to establish in the maturing room.

 

In fact, the cheese is so young, it captures the moment in time, the season in which it was created, the quality of the grass on which cow grazed, and of course, the happiness of the cow!

 

 

Nightwalker

How old am I: 3-8 weeks

 

Flavour: rich creamy goodness with a mild meaty flavour

 

Body: soft and delicate

 

What I look like: I am sold in 180g disks

 

Legends are created in moments, but last forever – and their names are borne from damn good yarns. Like this one.

 

Four times a year, cheese maker Jack Holman and a few mates head out for a night bush walk. On this particular night, Jack shared some cheese he had been working on. The mates loved it and Nightwalker was born: a cheese created from stress free cows; designed to be shared with friends.

 

Nightwalker is a washed rind cows milk cheese, with a soft, rich flavour and a body that becomes  gooey as it ages.

 

 

Feta

Flavour: Creamy, not excessively salty

 

Body: Soft yet crumbly

 

What I look like: I am sold in 180gm wedges

How Now Dairy’s feta has been lovingly created by Andrew and Nardia, the husband and wife cheese-making team from Goldfields Farm House, who together they have achieved the perfect balance of creaminess and saltiness that is the hallmark of an authentic, top shelf feta.

 

There’s no nasty salty aftertaste you find with many commercially produced feta; instead, our delicate feta can be crumbled into a salad or on toast, but can just as easily be sliced and enjoyed as part of a quality cheese platter. It really is all about balance.
